Recently, my husband was out of town, so I took that as an opportunity to test some new recipes out on myself. One of the new recipes was for zucchini boats. Since we have zucchini growing in our tiny vegetable garden, I like to find ways (other than frying and making zucchini bread) to use them.

this recipe as a guideline to follow, but just used ingredients I had on hand and omitted the bread crumbs entirely.
