My Muffin Maker


L is still enjoying her muffin making duty. She made oatmeal raisin muffins this week, and everyone enjoyed them. This week I taught her how to use a butter knife to level off her measuring cup of flour. In the next couple of weeks we are going to use a couple of new to us muffin recipes, and we're looking forward to trying them out.

We used this recipe for "Easy Oatmeal Muffins" as a guideline, but made some modifications.

1 cup of milk
1 cup of oats
1 egg
1/3 cup unsweetened applesauce
1/4 cup white sugar
2 tsp. baking powder
1/2 tsp salt
1/2 tsp. vanilla
1/2 tsp. cinnamon
1/2 cup raisins

Preheat oven to 425 degrees. Mix the milk and oats together and let them sit for 15 minutes. I don't know why, but that's what the recipe said that I was using as a guideline, so we did it. Add remaining ingredients, fill muffin cups 1/2 full, and bake for 15-20 minutes.
