Monday: Chicken Pot Pie
Tuesday: Springfield Style Cashew Chicken and rice (see my recipe below)
Wednesday: Puff Pastry Chicken Cordon Bleu, served with veggie
Thursday: Leftovers and make mac and cheese because it's K's favorite and it's her birthday!
Friday: K's birthday party - Pizza and birthday cake of course!
Saturday: Thanksgiving Banquet at church
Sunday: Meatloaf, mashed potatoes and gravy, and corn
Springfield Style Cashew Chicken
Cook one bag of frozen chicken strips and cut up into bite-sized pieces.
Make rice anyway you desire (steamed or fried)
Oyster Sauce (gravy)
1 chicken gravy packet (make according to package directions)
1 can cream of chicken soup
1 Tbsp. oyster sauce
a dash of soy sauce
1 tsp. sugar
onion powder to taste
a dash of pepper
Prepare the gravy and add the soup, sauces and seasonings.
To serve put rice on a plate, then chicken, and then pour sauce/gravy on top. You can garnish with cashews and chopped green onions if desired.
