Neighbors and Pumpkin Bread


Since October I have been meaning to make loaves of pumpkin bread to share with my neighbors. I am the queen of never following through with my good intentions. However, when I went shopping on Friday, I stocked up on flour, sugar, eggs, and pumpkin so I wouldn't have any excuses to fall back on for not following through on my good intentions. Ann Voskamp also shared on her blog this past weekend a link to these really cute printables that say "GIVE THANKS." 

So, on Saturday night I baked a batch of what I call "Marilee's Pumpkin Bread." I wrapped them up with plastic wrap and slid them inside some clear cellophane bags and attached the cute printables. Would you like the recipe for the BEST pumpkin bread in the world? Of course, that is just my opinion.

Pumpkin Bread

3 1/2 cups flour
3 cups sugar
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 cup oil
4 eggs
2/3 cup water
1 Can of Pumpkin

Sift together dry ingredients including the sugar in a mixing bowl (I never sift. I just take my whisk and make sure the dry ingredients are mixed well, but you can sift if you want. I do have to warn you, I tried sifting this once and my hand hurt. That's a lot of flour and sugar!). Add the rest of the ingredients and mix until smooth. Divide into 2-3 loaf pans. It all depends on how big your pans are. Bake at 350 degrees for 1 hour. Cool on wire rack. This bread freezes well.

*We add chocolate chips to this if we have some extra in the pantry.

We passed out pumpkin bread to our neighbors when we first moved here 4 1/2 years ago. (Great minds think alike!) I keep saying I'm gonna do it again...but just haven't. I need to.
